Alfredo Sauce Recipes to Serve with Pasta

While a quick Internet search will turn up hundreds of Alfredo  recipes, nothing is better on al dente pasta that a simple classic Alfredo.  The Alfredo can be used over pasta alone or add cooked chicken and steamed veggies to make the dish even more nutritious.

The key to a good Alfredo is using freshly ground cheese.  Do not attempt to make this dish using canned Parmesan as it simply does not melt as well as freshly grated cheese.  The canned cheese will leave you with a gritty Alfredo sauce that is inferior in flavor.

Try the following recipe before venturing on to the more exotic sauce recipes.  This recipe makes sufficient sauce for one and one half pounds of pasta.

  • 1 Cup heavy cream
  • 1/3 Cup freshly grated Parmesan cheese
  • 1/4 Cup butter
  • Salt and pepper as needed.

To prepare the sauce, melt the butter over low heat and add the cream.  Heat over gentle heat, stirring constantly until cream starts to thicken.  Remove from heat and add cheese.  Stir the mixture until thickened and add salt and pepper to taste.  You may want to add 1/2 teaspoon of grated nutmeg for a more classic taste.

While this recipe is a simple Alfredo sauce, other recipes may add cream cheese for a creamier sauce or use Romano or other hard cheeses to add to the complexity of the flavor.

When choosing pasta recipes, fettuccini is the classic noodle to serve under the sauce.  However, the pastas can be served with this sauce are limitless.  Kids may prefer it served over macaroni for a classic white macaroni and cheese, but practically any pasta can be served with Alfredo sauce recipes.  Add a salad and garlic toast to the side for a great meal that can be quickly prepared and ready to serve the family.
